Contribution of microbial community to flavor formation in tilapia sausage during fermentation with Pediococcus pentosaceus

Chunsheng Li et al.

Summary: The study investigated the changes of volatile compounds and microbial community in tilapia sausages fermented with Pediococcus pentosaceus, indicating that anaerobes such as Pediococcus and Lactococcus played a crucial role in volatile flavor formation. Additionally, microbial diversity decreased significantly throughout the fermentation process, with a few main microbial genera dominating the fermentation stages.

The effect of aspartic acid on the freeze-drying survival rate of Lactobacillus plantarum LIP-1 and its inherent mechanism

Zichao Chen et al.

Summary: The addition of aspartic acid to the medium significantly improves the freeze-drying survival rate of certain strains of Lactobacillus plantarum. Further research reveals that this improvement is due to reduced cell wall, cell membrane, and DNA damage. Modifying the composition of the culture media is a potential approach to enhance the freeze-drying survival of strains.

The fermentation properties and microbial diversity of soy sauce fermented by germinated soybean

Guozhong Zhao et al.

Summary: Germinated soybean sauce had higher levels of GABA, isoflavones, total polyphenol, and Bacillus compared to control soy sauce fermented by normal soybeans. Germinated soybean sauce also had major flavor components of aldehydes, alcohols, esters, and phenols, exhibiting a better aroma and taste. Soy sauce fermented by soybeans germinated for 48 hours showed greater advantages than those germinated for 24 and 72 hours.

Targeted precursor addition to increase baked flavour in a low-acrylamide potato-based matrix

Tolgahan Kocadagli et al.

Summary: This study aimed to enhance the baked flavor of low-acrylamide potato products by adding specific amino acids and key intermediates. The results showed that increasing both Strecker aldehydes and pyrazines together led to the highest increase in baked flavor. This work highlights the possibility of improving flavor without increasing acrylamide concentration.

Huan Yang et al.

Summary: The study found that heat preadaptation can enhance acid tolerance in Tetragenococcus halophilus. The heat-treated cells exhibited smoother surface, lower roughness and higher integrity under acid stress. Transcriptomic analysis revealed that heat preadaptation induced differential gene expression related to cellular metabolism and membrane transport.

Effect of Hericium erinaceus on bacterial diversity and volatile flavor changes of soy sauce

Guozhong Zhao et al.

Summary: This study investigates the regulation of soy sauce quality and microbial community by adding Hericium erinaceus during fermentation process. It was found that Hericium erinaceus had antimicrobial effects, decreased bacterial richness and diversity, and promoted the accumulation of esters and alcohols in soy sauce. Additionally, it positively influenced sensory constituents in soy sauce production.

Development of a defined autochthonous starter through dissecting the seasonal microbiome of broad bean paste

Yun Jia et al.

Summary: Bean-based fermentation foods are prone to inconsistency in flavor and quality due to the varying microbial communities, influenced by environmental variables. This study compared the physicochemical metabolism and microbial community of seasonal broad bean paste (BBP) to identify key metabolites and unique taxa affecting flavor and quality. The findings showed that different microorganisms, such as Lactobacillales and Saccharomycetales, contribute differently to flavor quality, with specific microbial combinations influencing the overall sensory characteristics and physicochemical metabolites of BBP fermentation.
