Natural Co-Occurrence of Multiple Mycotoxins in Unprocessed Oats Grown in Ireland with Various Production Systems

Lorenzo De Colli et al.

Summary: This study investigated the natural co-occurrence of 42 mycotoxins in unprocessed oat grains grown in Ireland, identifying the influences of different farming systems on mycotoxin production, with gluten free oats containing lower concentrations of certain toxins. Further research is needed to define optimal agronomic practices and to expand knowledge on the occurrence of various mycotoxins.

Oat-Based Foods: Chemical Constituents, Glycemic Index, and the Effect of Processing

Kailong Zhang et al.

Summary: The desire for foods with lower glycemic indices has led to the exploration of functional ingredients and novel food processing techniques. Among cereal crops, oats have shown the greatest promise for mitigating glycemic response. This review evaluated decades of research on the effects of oat components on the GI level of oat-based foods and discussed the impact of processing techniques on GI levels.
