Probiotic fermented oat dairy beverage: viability of Lactobacillus casei, fatty acid profile, phenolic compound content and acceptability

Summary: The combination of oats, such as water-soluble oat extract (SOE), and probiotic microorganisms can enhance nutritional value and health benefits for consumers. The study showed that the addition of SOE does not affect the viability of probiotic bacteria, and there was an increase in bioactive compounds soluble in aqueous medium during storage. Additionally, the fermented oat dairy beverage with L. casei received positive sensory evaluation and high consumer acceptance rate.

Synergistic Effect of Methyl Jasmonate and Abscisic Acid Co-Treatment on Avenanthramide Production in Germinating Oats

Summary: Treating germinating oats with MeJA and ABA individually or in combination can increase avenanthramide production by upregulating key enzymes in the biosynthesis pathway. The synergistic effect of MeJA and ABA treatment results in the highest expression of AsHHT5, enhancing avenanthramide biosynthesis in germinating oats. Elicitor-mediated metabolite farming using MeJA and ABA shows potential as a valuable method for avenanthramide production in germinating oats.
