Exploration of biodegradation mechanism by AFB1-degrading strain Aspergillus niger FS10 and its metabolic feedback

Tianyu Qiu et al.

Summary: This study investigated the biotransformation pathway of AFB(1) in Aspergillus niger FS10 and its metabolic regulation during AFB(1) degradation. Four metabolic degradation products were identified, leading to the proposal of two biotransformation pathways. Metabolomics data showed that FS10 exhibited varying degrees of bioremediation under different doses of AFB(1), with glutathione playing a significant role in the biotransformation process.

Effect of plant-based compounds on the antifungal and antiaflatoxigenic efficiency of strobilurins against Aspergillus flavus

Fei Tian et al.

Summary: The study found that plant-based compounds such as baicalein can enhance the antifungal effects of strobilurins against aflatoxigenic Aspergillus flavus, transforming them from fungistatic to fungicidal agents. This provides a novel insight for the development of safer and more effective strategies to control aflatoxin contamination.

High-throughput sequencing of the microbial community associated with the physicochemical properties of meju (dried fermented soybean) and doenjang (traditional Korean fermented soybean paste)

Jung-A Ryu et al.

Summary: The study investigated the composition of microbial communities in traditional Korean soybean paste Doenjang and the factors affecting food quality. Differences were found in water content, salt concentration, acidity, and amino-type nitrogen in meju and doenjang across different batches, with Aspergillus identified as the dominant fungi.
