The effect of red and violet light emitting diode (LED) treatments on the postharvest quality and biodiversity of fresh-cut pakchoi (Brassica rapa L. Chinensis)

Summary: The study found that red and violet LED irradiation significantly inhibited changes in sensory evaluation of pakchoi, increased the content of chlorophyll, ASA and antioxidant enzymes, and prolonged the shelf life of pakchoi. Additionally, LED treatment altered microbial community structure and inhibited the reproduction of specific spoilage organisms, contributing to the preservation of pakchoi quality.

Summary: This study investigated the physiological performance and whole-cell metabolomic response of Pediococcus pentosaceus R1 to oxidative stress. The findings show that under oxidative stress, the levels of ROS and antioxidant enzymes significantly increased, along with elevated levels of amino acids and saccharides. Additionally, saturated fatty acids levels also increased, which could help prevent the entry of H2O2 by decreasing membrane fluidity.

Summary: Microbiological safety in the food industry is always a concern due to sublethal tolerance in bacteria for common and natural sanitizers. Natural bacteriocins like nisin may interfere with the efficiency of major compounds of essential oils against foodborne pathogenic bacteria, but nanoemulsioned forms can enhance the bactericidal potential of natural compounds. This study highlights the importance of careful use of natural compounds as antimicrobial agents to avoid sublethal tolerance in pathogenic bacteria.
