Physicochemical Characteristics and Microbial Communities in Gochujang, a Traditional Korean Fermented Hot Pepper Paste

Summary: This study identified the physicochemical characteristics and microbial communities of gochujang and investigated the interrelationship between them before and after fermentation. The microbial genera in gochujang changed significantly after fermentation, with Bacillus becoming predominant among bacteria and Zygosaccharomyces and Millerozyma dominating among fungi. The high level of amino-type nitrogen before fermentation was related to the abundance of specific bacteria, while the flavor of gochujang after fermentation was influenced by the abundance of certain fungi. This analysis provides insights into the factors affecting the quality of gochujang.
