Isolation and Characterization of Probiotic Bacillus subtilis MKHJ 1-1 Possessing L-Asparaginase Activity

Hyeji Lim et al.

Summary: This study aimed to isolate functional Bacillus strains from Korean fermented soybeans, with MKHJ 1-1 showing the highest L-asparaginase activity. MKHJ 1-1 was identified as Bacillus subtilis subsp. stercoris D7XPN1 and exhibited high acid resistance and strong autoaggregation ability. It has potential as a probiotic with L-asparaginase activity, especially in the food and pharmaceutical industry.
