Lipid oxidation in oil-in-water emulsions: Iron complexation by buffer ions and transfer on the interface as a possible mechanism

Summary: The study found that buffers (citrate and phosphate) chelate iron ions (Fe (II)). Depending on the pH value and the type of buffer-Fe (II) complex, its prooxidant activity and spatial distribution are influenced. The complex charge defines the interactions with the oil-water interface, i.e., positively charged interfaces repel positively charged complexes which keeps the prooxidant away.

Nanoparticle O-H Bond Dissociation Free Energies from Equilibrium Measurements of Cerium Oxide Colloids

Summary: A novel equilibrium strategy is presented for measuring the hydrogen atom affinity of colloidal metal oxide nanoparticles, focusing on redox changes and H loadings of nanoceria. The measured CeO-H BDFEs span a range of 13 kcal mol(-1) and are related to the average redox state of the nanoceria colloid. The tunability of ceria BDFEs may explain its effectiveness in catalysis.

This discovery aids in understanding the redox-mediated bioactivity of melanins and quinones.

Nitroxides as Building Blocks for Nanoantioxidants

Summary: Nitroxides are an important class of radical trapping antioxidants with promising biological activities due to their ability to scavenge peroxyl radicals. The reaction rate constants of TEMPO derivatives with peroxyl radicals were measured, showing a good Marcus relationship between log (k(inh)) and E degrees. The use of nitroxide derivatives in developing novel nanoantioxidants was discussed, highlighting the importance of choosing the best linkage group and the regeneration cycle in determining the duration of inhibition.

The sensitivity of the oxidation process to acids and the generation of helicene radical cations in the reaction process were observed. Along with synthesis, EPR studies and kinetic constants were measured and calculated to provide a complete understanding of the redox behavior of these chiral compounds.
