The glucosinolates and their bioactive derivatives inBrassica: a review on classification, biosynthesis and content in plant tissues, fate during and after processing, effect on the human organism and interaction with the gut microbiota

Macro- and Micro-Nutrient Composition and Antioxidant Activity of Chickpea and Pea Accessions

Summary: Epidemiological studies have shown a negative correlation between legume consumption and age-related diseases, likely due to the presence of antioxidant compounds such as phenolic and flavonoid compounds. Different pea and chickpea accessions exhibited varying antioxidant activity, with chickpeas having higher DPPH scavenging activity and peas showing higher antioxidant activity as evaluated using the ABTS assay. Chemical composition was found to influence antioxidant activity, with pea accessions having higher content of total phenolic compounds, Zn, and Cu, while black and brown chickpeas had higher levels of anthocyanins, Mn, Mg, and Ca.

Phenolic Composition, and Antioxidant and Antineurodegenerative Potential of Methanolic Extracts of Fruit Peel and Flesh of Pear Varieties from Serbia

Summary: The study revealed that peel extracts of traditional Serbian pear varieties have high content of phenolic compounds and significant antioxidant and moderate antineurodegenerative potential. The 'Takisa' peel extract showed the highest contents of total flavonoids and individual compounds, as well as the strongest antioxidant and TYR inhibitory activities. This suggests that fruits of traditional Serbian pear varieties are rich in bioactive components and could be used for functional food and potential nutraceutical applications to prevent diseases induced by oxidative stress.
