Immunological components and antioxidant activity in human milk processed by different high pressure-thermal treatments at low initial temperature and flash holding times

Summary: The study found that the effects of flash high pressure thermal processing on the immunoglobulins and cytokines in human milk depended on the pressure intensity and temperature combination. Under specific conditions, treatment at 600 MPa and 0 degrees Celsius may be the best choice for preserving the immunological parameters and antioxidant activity of human milk.
