Simultaneous Determination of C18 Fatty Acids in Milk by GC-MS

Meiqing Chen et al.

Summary: The study established a GC-MS method for the determination of C18 FAs in milk, simplifying the methylation process and showing that additional acid-catalyzation was not necessary. The proposed method demonstrated good accuracy and precision, and was applied to different types of milk samples, revealing the impact of UHT treatment on the C18 fatty acid profile.
