Shelf life extension of strawberry juice by equivalent ultrasound, high pressure, and pulsed electric fields processes

Semanur Yildiz et al.

Summary: Nonthermal processing technologies aim to produce safe, fresh-like, and high quality food products while maintaining the quality attributes of the food during its shelf life. This study evaluated the microbial stability, physicochemical properties, and phytochemical characteristics of strawberry juice processed by ultrasonication, high pressure processing, and pulsed electric fields, showing differences in their effects on natural microbiota and quality characteristics during storage. High pressure processing was found to be the best option for extending the shelf life of strawberry juice and enhancing its phytochemical characteristics under the selected processing conditions.

Influence of Different Non-thermal Processing on Guava, Orange, and Tangerine Juices and the Food Matrix Effects

Nathan H. Noguera et al.

Summary: The study evaluated the impact of non-thermal technologies on bioactive compounds, antioxidant capacity, and enzymes in fruit juices. Guava juice was more susceptible to ozone and ultrasound processing, while orange juice showed reduced bioactive compounds after ozone treatment. Different fruits responded differently to the treatments, highlighting the influence of food matrix on non-thermal processing.
