Effects of processing methods on the chemical composition and antioxidant capacity of walnut (Juglans regia L.) oil

Pan Gao et al.

Summary: Different methods of processing walnut oil were compared, with hexane extraction proving to be the most efficient for lipid isolation. The oils obtained from different methods showed variations in fatty acid composition and antioxidant content. Multiple linear regression analysis revealed that various components contribute to the overall antioxidant capacity of walnut oil.

Quercetin and its ester derivatives inhibit oxidation of food, LDL and DNA

Won Young Oh et al.

Summary: Esterification of quercetin with fatty acids did not compromise its antioxidant activity, and the derivatives showed similar or even better antioxidant properties than quercetin itself. This suggests that quercetin derivatives could be valuable antioxidants in food and biological systems.
