Effect of thermal liquefaction on quality, chemical composition and antibiofilm activity against multiresistant human pathogens of crystallized eucalyptus honey

Irina Villacres-Granda et al.

Summary: The study revealed that thermal liquefaction at 45 and 60 degrees did not affect the quality of honey, but resulted in a significant reduction in reducing capacity, total phenolic content, and hydrogen peroxide content. At 60 degrees, the honey's ability to inhibit biofilm formation was significantly decreased.

Novel approaches in anthocyanin research - Plant fortification and bioavailability issues

Jose M. Alvarez-Suarez et al.

Summary: Anthocyanins are important plant pigments with health-promoting properties, yet their bioavailability is low and influenced by factors such as food processing, digestion, and fruit content. Research indicates that different processing methods can affect the stability and biological effects of anthocyanins.

Antimicrobial activity of heat-treated Polish honeys

Michal Majkut et al.

Summary: The study found that for most samples, there was a significant reduction in antimicrobial properties (MBC >= 50%) at 82 degrees Celsius and 62 degrees Celsius after exposure for 15 minutes and 120 minutes. Short exposure time reduced vitamin C content (<= 50%) but increased total polyphenols content (>= 27%) and FRAP value (>= 106%).
