Brief Insight into the Underestimated Role of Hop Amylases on Beer Aroma Profiles

Characterization of odour-active compounds of sour guava (Psidium acidum[DC.]Landrum) fruit by gas chromatography-olfactometry and odour activity value

Summary: The volatile compounds in sour guava were isolated and analyzed using HS-SPME and SAFE methods. Analysis of the extracts revealed 24 odour-active compounds, with hexyl acetate, 3-methylbutyl butanoate, (Z)-3-hexenyl acetate, (Z)-3-hexenyl hexanoate, nonanal, and (E)-beta-ionone contributing the most to the typical sour guava aroma. The results showed a strong resemblance between the fruit's typical aroma and the aroma model.
