Summary: The bacteriocin plantaricin MX produced by Lactobacillus plantarum NMD-17 isolated from Inner Mongolia traditional koumiss has a broad antimicrobial spectrum. Other lactic acid bacteria strains significantly induce bacteriocin synthesis and increase cell numbers and activity in L. plantarum NMD-17, with associated genes confirmed. The study suggests a close relationship between bacteriocin synthesis and the LuxS-mediated quorum sensing system in co-cultivation.
