Evaluation of Bioactive and Physicochemical Properties of White and Black Garlic (Allium sativum L.) from Conventional and Organic Cultivation

Summary: This study evaluated the bioactive and physicochemical properties of white and black garlic from conventional and organic cultivation. The black garlic showed significantly higher levels of soluble solids, total polyphenol, and antioxidant activity compared to white garlic. The color of garlic changed from white to dark brown or black during thermal processing, and organic black garlic had improved bioactive ingredients and antioxidant activity compared to conventional garlic.
