Glycemic response, satiety, gastric secretions and emptying after bread consumption with water, tea or lemon juice: a randomized crossover intervention using MRI

Summary: This study investigated the gastric emptying, appetite perceptions, and glycemic responses to bread consumed with water, tea, or lemon juice. The results showed that compared to water, lemon juice increased gastric volume and emptying rate, and reduced the glycemic response. Tea had no effect. Changes in appetite perceptions and gastric volumes were correlated.

Summary: The study aimed to test the effects of black tea and lemon juice on the glycemic response to bread and subsequent energy intake in healthy adults. Results showed that lemon juice significantly reduced the peak blood glucose concentration and delayed the time to peak, but had no effect on ad libitum energy intake.

Summary: This study investigated the effects of food structure on physical breakdown and gastric emptying of solid starch-based foods during gastric digestion. The results showed that the physical properties of the gastric digesta were influenced by gastric secretions and gastric emptying, depending on the buffering capacity and initial macrostructure of the diets. Additionally, differences were found between the proximal and distal stomach regions, and a relationship between gastric breakdown rate and gastric emptying half-time was observed.
