Lipase-catalyzed glycerolysis extended to the conversion of a variety of edible oils into structural fats

Summary: Lipase-catalyzed glycerolysis is a viable technique to convert different oils into structural fats with increased solid fat content. The study found that oils with >10% saturated fat and high oleic acid content showed the greatest increase in solid fat content following glycerolysis. Tigernut oil, after glycerolysis, can be used to produce margarine with similar plasticity to commercial margarine.
