Multilayered electrospinning strategy for increasing the bioaccessibility of lycopene in gelatin-based sub-micron fiber structures

Esmaeel Charpashlo et al.

Summary: Electrospinning was used to design a multilayer sandwich structure to enhance the bioaccessibility of lycopene in the small intestine. The encapsulation efficiencies of lycopene in the sandwich samples were high and the release behavior exhibited Fickian diffusion characteristics.

Lycopene-loaded bilayer emulsions stabilized by whey protein isolate and chitosan

Peifeng Lv et al.

Summary: This study prepared a bilayer emulsion loaded with lycopene and found that a chitosan solution of 0.5 wt% concentration provided the best physical stability. Experimental results demonstrated that the bilayer emulsion provided better protection for encapsulated lycopene compared to a WPI monolayer emulsion.

Lycopene: From tomato to its nutraceutical use and its association with nanotechnology

Gabriela Correa Carvalho et al.

Summary: Solvent extraction and super-critical fluid extraction, centrifugation and evaporation, and HPLC and UV-vis spectrophotometer were the most commonly used methods for the extraction, concentration, and quantification of lycopene. It was also suggested that utilizing nanotechnology could help overcome limitations related to the physicochemical characteristics of lycopene, which hinder not only its extraction process but also its use as a nutraceutical.

Extraction and preservation of lycopene: A review of the advancements offered by the value chain of nanotechnology

Angelica Serpa Guerra et al.

Summary: Lycopene's chemical structure as an antioxidant is beneficial for health, making it a promising food additive. However, lycopene is susceptible to chemical changes when exposed to light and high temperatures, leading to a focus on its stability during isolation, food processing, and storage. By utilizing nanotechnology tools such as high-pressure homogenization and microfluidization, lycopene extraction and preservation can be improved.
