Ultrasound improves the decontamination effect of thyme essential oil nanoemulsions against Escherichia coli 0157: H7 on cherry tomatoes

Qiao He et al.

Summary: The development of novel decontamination technologies to ensure the microbiological safety of fresh produce has received considerable attention. This study introduced a method using hurdle technologies to sanitize artificially contaminated cherry tomatoes, demonstrating the remarkable antimicrobial activity of thyme essential oil nanoemulsion combined with ultrasound against E. coli O157:H7. The synergistic effects of the combined treatments effectively reduced bacterial populations and minimized cross-contamination in wastewater, without altering the quality characteristics of cherry tomatoes.

Antibacterial mechanism of ultrasound against Escherichia coli: Alterations in membrane microstructures and properties

Qiao He et al.

Summary: This study explored the response of bacterial cell membranes to ultrasound exposure. It was found that ultrasonic treatment resulted in a significant reduction in E. coli populations and increased sensitivity to antimicrobial compounds. Additionally, ultrasonic-treated cells showed membrane damages and increased membrane permeability.
