Direct quantification of red wine phenolics using fluorescence spectroscopy with chemometrics

Summary: Fluorescence spectroscopy combined with chemometrics was successfully used to directly quantify phenolic content in red wine and fermenting samples. Predictive models for total phenols, total condensed tannins and total anthocyanins were built using machine learning algorithms, showing good classification ability for South African red wine cultivars. This approach could be a useful tool for authentication and quality control by regulatory bodies.

On the other hand, wines from the 2008 and 2009 vintages exhibited the highest levels of procyanidin B1, catechin, gallic acid, trans-piceid, and trans-resveratrol.
