Comparative study on physicochemical properties of starch films prepared from five sweet potato (Ipomoea batatas) cultivars

Summary: Five different sweet potato cultivars were used to extract sweet potato starch for developing starch-based films with varying physicochemical properties. Films with higher amylose content exhibited higher crystallinity, tensile strength, and lower water vapor and oxygen permeabilities, indicating the significant role of sweet potato cultivar, especially the amylose content, in determining film properties.
