Effects of ultrasound on the taste components from aqueous extract of unsmoked bacon

Jian Zhang et al.

Summary: Ultrasound treatment significantly improved the taste profile of unsmoked bacon by increasing the concentration of free amino acids and organic acids. Sensory scores showed that ultrasound groups had higher scores, attributed to the improved levels of specific metabolites. Furthermore, crucial metabolic pathways related to taste development were identified after ultrasound treatment.

Unraveling proteome changes of irradiated goat meat and its relationship to off-flavor analyzed by high-throughput proteomics analysis

Wei Jia et al.

Summary: High-throughput proteomics was used to observe the proteome profiles changes and off-flavor formation in irradiated goat meat. A total of 207 proteins with significant changes were identified, with 26 proteins related to off-flavor, particularly those involved in protein oxidation, cysteine, and methionine metabolism. The study suggests that the irradiation off-flavor dissipates gradually due to metabolic processes during storage.

Characterization of the key taste compounds during bread oral processing by instrumental analysis and dynamic sensory evaluation

Dandan Pu et al.

Summary: The study found that during chewing bread, salty, sour, and sweet tastes undergo significant changes, with salty taste being dominant initially and sweet taste taking over after 7 seconds. Key taste compounds contributing to bread oral processing, such as malic acid and succinic acid, were identified through addition experiments.

Screening and validation of candidate genes involved in the regulation of egg yolk deposition in chicken

Junnan Zhang et al.

Summary: Eggs with different yolk weights despite the same total weight have varying nutritional values and consumer preferences. Investigating the genetic factors of yolk quantity in chicken eggs is crucial for scientific and practical purposes. Studying the molecular mechanisms of high yolk percentage traits can optimize breeding strategies for altering yolk percentage in eggs.

Fatty acid profile, oxidative status, and content of volatile organic compounds in raw and cooked meat of different chicken strains

A. Cartoni Mancinelli et al.

Summary: This study evaluated the fatty acids, antioxidants, and VOC profiles of raw and cooked chicken meat samples from 4 strains differing in growth rates (SG, MG, FG). The VOC profile of meat was influenced by chicken genotype and cooking method, with SG and MG genotypes showing higher VOC production and n-3 loss compared to FG. Specific dietary protocols may be needed for SG and MG genotypes to counteract lipid oxidations.

Effects of packaging methods on the quality of heavy metals-free preserved duck eggs during storage

Yuting Wang et al.

Summary: The study systematically studied the effects of 5 packaging methods on the quality of heavy metals-free preserved eggs during storage. Among the methods, uncoated preserved eggs suffered the most serious moisture loss and mass loss. The best preservation performance was found in the paraffin coating and vacuum packing methods, while plastic bag packing showed the worst preservation performance.

Short-term frozen storage of raw chicken meat improves its flavor traits upon stewing

Jun Qi et al.

Summary: The study found that a limited frozen storage duration of raw chicken meat can enhance its flavor upon stewing, as indicated by increased free amino acid contents and umami concentration, even though 5'-nucleotide concentrations decreased. Additionally, mineral elements and volatile compounds in the meat increased initially with storage duration, then decreased. The overall flavor profiles showed progressive differences among samples, with meaty, umami, and salty traits reaching maximum scores after 6 weeks of frozen storage.
