Effects of the structure and gel properties of myofibrillar protein on chicken breast quality treated with ultrasound-assisted potassium alginate

Haibo Shi et al.

Summary: The study demonstrated that the low addition of potassium alginate treatment improved the texture of 300-days-old chicken breast, reduced liquid loss, increased the solubility of myofibrillar protein, and optimized gel properties.

Effect of phospholipids on the physicochemical properties of myofibrillar proteins solution mediated by NaCl concentration

Hongjie Dai et al.

Summary: The addition of phospholipids was found to alter the physicochemical properties of myofibrillar protein (MP) solution, affecting particle size, turbidity, modulus, solubility, and viscosity, particularly at NaCl concentrations of 0.3-0.5 mol/L. Additionally, at a high NaCl concentration (0.7 mol/L), phospholipids enhanced the emulsifying activity and stability of the MP solution.

Effect of oxidation modification induced by peroxyl radicals on the physicochemical and gel characteristics of grass carp myofibrillar protein

Cikun Liu et al.

Summary: The study found that peroxyl radicals generated from AAPH can affect the physicochemical and gel properties of myofibrillar protein (MP) from grass carp, leading to increased carbonyl and dityrosine content, decreased free ammonia and sulfhydryl content, and reduced protein solubility. The structure of MP changed from alpha-helix to beta-sheet and beta-turn, with a decrease in gel properties such as elasticity and water holding capacity.
