Changes of metabolite profiles of fish models inoculated with Shewanella baltica during spoilage

Xiaowei Lou et al.

Summary: The study found that Shewanella baltica can decompose nutrients in fish products through various metabolic pathways, primarily through nitrogen and nucleotide pathways. These changes are mainly attributed to the enzymes of S. baltica during growth and respiration processes.

Gamma ray irradiation: A new strategy to increase the shelf life of salt-reduced hot dog wieners

Isabela Rodrigues et al.

Summary: The study found that gamma ray irradiation had a significant impact on reducing the red color of hot dog wieners and resulted in higher levels of lipid oxidation during initial storage. However, sensory acceptance was not affected by the radiation doses. Moreover, there was a significant, dose-dependent reduction in microbial load, with 1.5 kGy being effective at assuring microbial safety without compromising product quality.

Ethanolic guava leaf extracts with different chlorophyll removal processes: Anti-melanosis, antibacterial properties and the impact on qualities of Pacific white shrimp during refrigerated storage

Oladipupo Odunayo Olatunde et al.

Summary: The ethanolic guava leaf extract with chlorophyll removal showed promising antibacterial properties and anti-melanosis effects, with the sedimentation process demonstrating the highest activity. Specific compounds present in the extract were found to contribute to these effects. Additionally, treating Pacific white shrimp with the extract reduced microbial and chemical changes during refrigerated storage, highlighting its potential as a natural preservative.

Characterization of two enzymes from Psychrobacter cryohalolentis that are required for the biosynthesis of an unusual diacetamido-D-sugar

Michael P. Linehan et al.

Summary: This study investigated the functional and structural properties of proteins encoded by genes 0638 and 0637 in Psychrobacter cryohalolentis K5(T), confirming their hypothesized roles in the biosynthesis of unusual sugars. The X-ray crystallographic structures of these proteins revealed insights into the enzymatic mechanisms involved, shedding light on an uncommon sugar biosynthetic pathway in Gram-negative bacteria. Furthermore, an efficient method for acetyl-CoA synthesis was described, overcoming the high cost associated with the analysis.

Physicochemical and Microbial Diversity Analyses of Indian Hot Springs

Manik Prabhu Narsing Rao et al.

Summary: The present study conducted physicochemical and microbial diversity analyses of seven Indian hot springs, and found that temperature and pH influenced microbial diversity, with bacteria being the dominant group. Both culture-dependent and culture-independent methods revealed the potential of these springs to harbor novel microbial candidates and produce thermostable enzymes.

Transcriptional control of 2,4-dinitrotoluene degradation in Burkholderia sp. R34 bears a regulatory patch that eases pathway evolution

Danilo Perez-Pantoja et al.

Summary: The dnt pathway of Burkholderia sp. R34 is evolving from its ancestral substrate naphthalene to a new xenobiotic one, 2,4-dinitrotoluene (DNT). The gene cluster encoding the leading multicomponent ring dioxygenase DntA has activity on both old and new substrates, and is induced by a transcription factor dntR upon the addition of salicylate. The induction of dnt genes by salicylate is amplified upon exposure to true DntA substrates naphthalene or DNT.

Impact of DNA extraction and sampling methods on bacterial communities monitored by 16S rDNA metabarcoding in cold-smoked salmon and processing plant surfaces

Aurelien Maillet et al.

Summary: Amplicon sequencing was used to analyze bacterial communities associated with cold-smoked salmon products and processing plant surfaces. The study found that DNA extraction methods influenced the observed microbiota composition in cold-smoked salmon, while cleaning and disinfection procedures affected surface microbiota richness and diversity. Genus-level analysis identified dominant bacteria and beta-diversity analyses indicated that surface topology and sampling methods affected bacterial community composition. Standardization of methodology and analytical validation are important for accurate 16S rDNA metabarcoding surveys.
