Mechanism study on enhanced foaming properties of individual albumen proteins by Lactobacillus fermentation

Jie Jia et al.

Summary: This study found that fermentation by various Lactobacillus strains can enhance the foaming properties of egg white proteins, including ovalbumin, ovomucin and ovomucoid, by improving their surface characteristics and stability. The surface hydrophobicity of ovalbumin increased significantly at 3 hours of fermentation, leading to improved foaming ability. Overall, the research provides insights into the molecular mechanisms behind fermentation treatment on egg white proteins and their functional properties.

Development of antibacterial nanoemulsions incorporating thyme oil: Layer-by-layer self-assembly of whey protein isolate and chitosan hydrochloride

Siqi Li et al.

Summary: This study aimed to develop a thyme oil emulsion with good physicochemical properties and anti-bacterial activity. The emulsions with whey protein-coated essential oil droplets and double-layer coatings of cationic chitosan hydrochloride showed improved stability and prolonged antibacterial activity. Emulsions with smaller cationic droplets and double-layer coatings were shear-thinning fluids.

Physicochemical, rheological and functional properties of Nettle seed (Urtica pilulifera) gum

Zahra Zamani et al.

Summary: Nettle seed gum (NSG) is a new source of hydrocolloid with good water absorption capacity and scavenging activity. The solubility and emulsion capacity of NSG increase with temperature, while foam performance decreases.
