Effect of unsaturation of free fatty acids and phytosterols on the formation of esterified phytosterols during deodorization of corn oil

Summary: This study found that free fatty acids are the major provider in the esterification of phytosterols during deodorization process, with temperature and unsaturation playing a significant role. Saturated fatty acids and deodorization process with steam as stripping gas are beneficial in esterifying free phytosterols to phytosterol fatty acid esters.
