The Quality of Red Bell Pepper Subjected to Freeze-Drying Preceded by Traditional and Novel Pretreatment

Summary: Previous literature has shown that using PEF or a combination of PEF and US can improve the dehydration process and enhance the quality of dried products. Different treatments were applied to red bell peppers before freeze-drying, and all analyzed technological variants improved drying kinetics. Non-thermal pretreatment before freeze-drying resulted in higher levels of vitamin C, total phenolic, and carotenoids compared to blanching, despite blanching reducing drying time the most.

Summary: Drying spine gourd slices at different temperatures led to significant changes in its quality and nutrient content, with an increase in protein, fiber, total phenolic, and total flavonoid content as drying temperature increased, while reducing fat, carbohydrate, chlorophyll, ascorbic acid, and antioxidant activity. The mineral content of fresh spine gourd differed significantly from dried samples, and the temperature of drying had variable effects on the nutritional composition.

Microwave assisted fluidized bed drying of red bell pepper: Drying kinetics and optimization of process conditions using statistical models and response surface methodology

Summary: Red bell peppers were dried using a microwave assisted fluidized bed dryer and the process was optimized using response surface methodology. The optimum drying conditions were determined to be 468.04 W microwave power, 60.14 degrees C air temperature, and 16.82 m/s air velocity, with predicted outputs including ascorbic acid, total phenolic content, total flavonoid content, and more.
