Efficacy of antimicrobial interventions in reducing Salmonella enterica, Shiga toxin-producing Escherichia coli , Campylobacter, and Escherichia coli biotype I surrogates on non-chilled and chilled, skin-on and skinless pork

L. C. Eastwood et al.

Summary: The research showed that lactic acid and peroxyacetic acid treatments were effective in reducing pathogenic and surrogate bacteria on pork, while warm water treatment did not produce similar results. Objective and sensory color evaluations indicated minimal negative impacts on pork color after antimicrobial treatments. Various antimicrobial interventions were found to be effective in reducing bacteria on pork without diminishing quality.

Salmonella Genomics and Population Analyses Reveal High Inter- and Intraserovar Diversity in Freshwater

Abigail M. Deaven et al.

Summary: The study reveals a high level of Salmonella diversity and prevalence in the Susquehanna River basin, with seasonal differences in serovar distribution. Whole-genome sequencing showed diverse strains within the same serovar. The presence of multiple serovars in each sample highlights the complexity of Salmonella ecology in freshwater systems.

A Multidrug-Resistant Salmonella Infantis Clone Is Spreading and Recombining in the United States

Gregory H. Tyson et al.

Summary: This study conducted short-read sequencing analysis of the ESI clone of Salmonella Infantis in poultry in the United States, finding that this clone first appeared in retail meats in Tennessee in 2014 and had spread nationwide by 2019, comprising 29% of all Salmonella isolated from retail chickens and 7% from retail turkey. Long-read sequencing data showed substantial recombination in the pESI plasmid, resulting in the presence of multiple resistance genes.

Antimicrobial tolerance, biofilm formation, and molecular characterization of Salmonella isolates from poultry processing equipment

T. Obe et al.

Summary: This study investigated the antimicrobial tolerance of Salmonella isolates from food processing environments, finding different levels of biofilm formation and antibiotic resistance. Some isolates exhibited resistance to sanitizers and antibiotics, potentially due to their strong biofilm forming ability causing them to persist on surfaces.
