Summary: Germinated Rhynchosia nulubilis fermented with Lactobacillus pentosus SC65 (GR-SC65) showed significant anti-inflammatory effects by reducing ear swelling, immune cell infiltration, and pro-inflammatory cytokines production. It also exhibited higher total polyphenol contents and deglycosylated isoflavonoids than unfermented GR. GR-SC65 may serve as a health supplement or prophylactic against delayed-type hypersensitive inflammatory diseases.
