Quantification and in vitro bioaccessibility of glucosinolates and trace elements in Brassicaceae leafy vegetables

Summary: The study found significant variability in glucosinolate content and profiles among different Brassicaceae species, with moderate bioaccessibility of these compounds that are important in anti-carcinogenic mechanisms. Additionally, Brassicaceae leaves were identified as moderate dietary sources of selenium, nickel, zinc, and calcium.
