Steady/dynamic rheological characterization and FTIR study on wheat starch-sage seed gum blends

Amir Pourfarzad et al.

Summary: The study revealed that higher levels of sage seed gum (SSG) incorporation in wheat starch (WS) blends resulted in changes in rheological properties and particle size, as well as promoted interactions between starch and SSG. Additionally, the structure of starch was influenced by the presence of SSG.

The transitioning feature between uncooked and cooked cowpea seeds studied by the mechanical compression test

Ekoue Teko et al.

Summary: This study used mechanical tests to investigate the reactions during the cooking of cowpea seeds (beans), specifically focusing on the time-dependence of strain epsilon(t) using creep tests. The results showed a clear correlation between the viscoelasticity indices and the transition of cowpea beans to the cooked state.

Flow, viscoelastic and masticatory properties of tailor made thickened pea cream for people with swallowing problems

P. Talens et al.

Summary: This study evaluated the flow, viscoelastic, and masticatory properties of tailor-made pea cream using different hydrocolloids, as well as the potential effect of saliva during chewing. By using carboxymethyl cellulose, tara gum, and konjac gum, it is possible to optimize the structure of thickened pea cream for dysphagia, providing a greater viscous component and a bolus that is easier to swallow.
