Spray drying of emulsions: Influence of the emulsifier system on changes in oil droplet size during the drying step

Martha L. Taboada et al.

Summary: The study investigated the influence of emulsifier system on oil droplet size changes during spray drying, showing that coalescence occurred in some systems. The findings suggest that oil droplet coalescence during drying is related to the elastic behavior of the interfacial film.
