Pasteurization mechanism of S. aureus ATCC 25923 in walnut shells using radio frequency energy at lab level

Summary: RF heating was used to process walnut shells inoculated with S. aureus ATCC 25923, resulting in damage to cell integrity, disruption of cell membrane homeostasis, and inhibition of cell wall synthesis. Transcriptomics analysis revealed differential expression of genes associated with nucleic-acid metabolism, translation, energy metabolism, cell membrane, and cell wall biosynthesis after RF treatment. These findings provide valuable insights into the pasteurization mechanism of S. aureus ATCC 25923 treated by RF heating.
