Enzymatic modification of potato starch by amylosucrase according to reaction temperature: Effect of branch-chain length on structural, physicochemical, and digestive properties

Summary: Branch-chain elongated starches were synthesized using amylosucrase (AS) from Deinococcus geothermalis (DGAS), resulting in increased branch-chain length and B-type crystal structure with lower reaction temperatures. These modifications led to improved thermal transitions and stability of the crystalline structure. The modified starches showed decreased solubility and swelling power, increased gelatinization temperatures and peak viscosities. In terms of digestive properties, there was a significant increase in slowly digestible starch and resistant starch contents.

Cross-linking/sulfonation to improve paste stability, adhesion and film properties of corn starch for warp sizing

Summary: The study found that cross-linking/sulfonation can improve the viscosity stability of cooked starch paste, enhance the adhesion of starch to cotton and polyester fibers, increase breaking elongation, bending endurance and moisture regain of starch film while decreasing its tensile strength, thus stabilizing paste viscosity, ameliorating the adhesion to fibers and diminishing film brittleness. Modification favored the desizing of starch in hot water, with increasing sulfonation levels and decreasing LCL values contributing to stability, desizability, adhesion to fibers, and decrease in brittleness. The IACLSS demonstrated potential in cotton and polyester sizing applications.

Formation of type 3 resistant starch from mechanical activation-damaged high-amylose maize starch by a high-solid method

Summary: This study focused on constructing a high-solid reaction system to prepare type 3 resistant starch (RS3) with highamylose maize starch by mechanical activation (MA) pretreatment combined with thermal and freeze-thaw treatments. The results showed that MA damaged starch with a certain viscosity could form dough with a small amount of water to construct a starch continuous phase system, leading to an increase in RS content. Thermal and freeze-thaw treatments contributed to the re-formation of internal crystal structure of MA damaged starch to form RS3. The study provides insights into the development of a highly effective approach for large scale production of resistant starch.
