Variation of volatile composition during the production of microencapsulated cream powder

Summary: The study investigated the variation of volatile compounds during the production of microencapsulated cream powder, demonstrating significant changes in volatile composition and amounts. Successful encapsulation of volatile acids and lactones in the cream was achieved, with indications of milk fat oxidation. Additionally, heat-treatment-related compounds increased and a methyl ketone degradation product was formed during spray drying.
