Total and bioaccessible heavy metals in cabbage from major producing cities in Southwest China: health risk assessment and cytotoxicity

Mengying Li et al.

Summary: Green leafy vegetables, such as cabbage, may contain heavy metals like As, Cd, Pb and Cr. While the levels of As, Cd and Pb were within limits set by Chinese National Standards and WHO/FAO, Cr exceeded the limit significantly. The bioaccessibility of Cd, Pb and Cr was found to be much higher than that of As, with only Cr showing potentially risky Estimated Daily Intake levels in cabbage. Further assessment using gastrointestinal cell responses suggested that existing models may overestimate human health risks associated with heavy metal exposure through cabbage consumption.
