Effect of high hydrostatic pressure-assisted pectinase modification on the Pb2+ adsorption capacity of pectin isolated from sweet potato residue

Amylose content modulates maize starch hydrolysis, rheology, and microstructure during simulated gastrointestinal digestion

Summary: In this study, the rheological properties and microstructure of normal amylose maize starch (NAM) and high amylose maize starch (HAM) solutions were compared during simulated gastrointestinal digestion. The results showed that HAM exhibited higher rheology and denser gel structure compared to NAM, leading to lower starch hydrolysis during intestinal digestion phase. The amylose content played a crucial role in modulating starch hydrolysis by forming denser gel structure and increasing digesta rheology.
