Metabolomics profiling during biofilm development of Bacillus licheniformis isolated from milk powder

Summary: Metabolomics analysis revealed that amino acid metabolism was highly active during biofilm development of Bacillus licheniformis at 55 degrees C, with cooperation from lipid, carbohydrate, and nucleotide metabolism. Amino acid biosynthesis made significant contributions in the early stages of biofilm formation, while metabolites in specific pathways such as arginine biosynthetic, galactose metabolism, and sphingolipid metabolism played a crucial role in building the biofilm. This study provides new insights into the dynamic metabolic changes and network during B. licheniformis biofilm development, with potential implications for improving environmental hygiene in dairy processing and ensuring quality of dairy products.
