Emulsified blend film based on konjac glucomannan/carrageenan/camellia oil: Physical, structural, and water barrier properties

Xi Zhou et al.

Summary: This study aimed to develop a new hydrophobic film based on konjac glucomannan and kappa-carrageenan by incorporating camellia oil. The addition of camellia oil through emulsification improved the hydrophobicity, water-resistance, thermal stability, optical properties, and mechanical properties of the film. Emulsifying camellia oil is an effective and promising method to enhance the properties of polysaccharide-based films.

Insight into the mechanism of decreasing N-nitrosodimethylamine by Lactobacillus pentosus R3 in a model system

Xuefei Shao et al.

Summary: Lactobacillus pentosus R3 significantly decreases the content of NDMA through inhibition of the formation reaction, decrease in precursors, and direct degradation. The strain's reduction of NDMA precursors and direct degradation of NDMA are important parts of the mechanism.

pH-responsive double-layer indicator films based on konjac glucomannan/camellia oil and carrageenan/anthocyanin/curcumin for monitoring meat freshness

Xi Zhou et al.

Summary: Double-layer indicator film was fabricated for monitoring chicken meat freshness, with different components bound together by hydrogen bond. The presence of the KC layer significantly improved the performance of the indicator layer, and the CAR-ATH-KC and CAR-ATH-CUR-KC labels showed more obvious color changes at 25℃ compared to the CAR-CUR-KC label.

Artificial intelligence application for classification and selection of fish gelatin packaging film produced with incorporation of palm oil and plant essential oils

Natacia da Silva e Silva et al.

Summary: The KNN algorithm was used to classify and select biodegradable packaging made from fish gelatine incorporated with palm oil and essential oils. The packaging with clove essential oil showed the highest antioxidant activity and tensile strength. Palm oil is an interesting alternative due to its antimicrobial and antioxidant properties for applications in biodegradable films.

Gelatin and/or chitosan-based films activated with Pitanga (Eugenia uniflora L.) leaf hydroethanolic extract encapsulated in double emulsion

Larissa Tessaro et al.

Summary: The addition of DE caused heterogeneity in the surface and internal structure of the films, leading to a decrease in gloss and water drop contact angle mainly due to increased surface roughness. Additionally, DE significantly improved the UV/Vis light barrier property of the films. The presence of DE increased the strength and stiffness of gelatin and chitosan-based films, but decreased these properties in the gelatin/chitosan blend, while also increasing the extensibility of all films and decreasing water solubility, water vapor permeability, and opacity. Films with DE exhibited high antioxidant activity, with films based on gelatin being the only ones to inhibit Staphylococcus aureus.

Summary: This study successfully produced stable CSO nanoemulsions with small droplet diameter and monomodal size distribution. The nanoemulsions exhibited antimicrobial properties, with a minimum inhibitory concentration of 200 mg/mL against Escherichia coli cells. Oral administration of CSO nanoemulsions significantly improved the survival rate of endotoxemic mice.

Summary: There is no standardized methodology for assessing the antimicrobial effects of edible films, but disc and well diffusion assays along with viable cell count methods are the most common. The key to selecting an appropriate evaluation method lies in the type of active components and materials used in producing the edible films.
