Rheological and structural properties of sodium caseinate as influenced by locust bean gum and κ-carrageenan

Meng-xue Tang et al.

Summary: The study investigated the interactions between sodium caseinate and polysaccharide using locust bean gum and kappa-carrageenan. It was found that an increase in polysaccharide content led to increased modulus in the mixtures. LAOS test and Fourier transform were used to detect slight rheological differences caused by microstructure changes.

High internal phase emulsions solely stabilized by natural oil-based nonionic surfactants as tea tree oil transporter

Qian Chen et al.

Summary: This study stabilized stable high internal phase emulsions (HIPEs) using Palm kernel oil ethoxylates (SOE-N60) and investigated the effects of various factors on the stability of HIPEs. The results showed that the stable HIPEs can effectively protect encapsulated tea tree oil and provide a potential delivery system with excellent stability and polydispersity.

Beeswax: A potential self-emulsifying agent for the construction of thermal-sensitive food W/O emulsion

Yuxing Gao et al.

Summary: The study successfully fabricated stable food-grade water-in-oil emulsions using a facial method at 20 degrees C, with long-term stability and no phase separation. Beeswax was utilized as a stabilizer in the system, regulating the beeswax content to produce emulsions with a droplet diameter of around 9 μm. These surfactant-free emulsions show great potential applications in the food, pharmaceutical, and feed industries.

Emulsion gels with different proteins at the interface: Structures and delivery functionality

Yao Lu et al.

Summary: Emulsion gels were prepared using different proteins as emulsifiers and denatured WPI as gelling agent. The study found that gels with WPI at the interface showed the highest gel strength and water holding capacity, while gels with LF at the interface had the highest swelling rate. These findings provide valuable information for designing emulsion gel structures for better delivery of bioactive compounds.
