In vitro digestion rate of fully gelatinized rice starches is driven by molecular size and amylopectin medium-long chains

Cheng Li et al.

Summary: The study found that fully gelatinized rice starches have two simultaneous digestion fractions (fast versus slow), with the rate constants of the slowly-digestible fraction significantly correlated with starch molecular sizes, especially with that of amylopectin molecules. Hydrodynamically larger amylopectin molecules tend to contain more shorter branches but less long chains, impacting the overall digestion rate.

Effects of amylose and amylopectin chain-length distribution on the kinetics of long-term rice starch retrogradation

Cheng Li et al.

Summary: This study investigated the long-term retrogradation kinetics of 10 different rice starches and found that amylose content has a parabolic relationship with the melting conclusion temperature and enthalpy of long-term retrograded starches. Additionally, the amount of amylose short-medium chains and amylopectin medium chains were negatively and positively correlated with the melting onset temperature of long-term retrograded starches, respectively. The findings could be applied in the rice industry to improve the textural attributes of cooked rice.

RS5 Produced More Butyric Acid through Regulating the Microbial Community of Human Gut Microbiota

Renbing Qin et al.

Summary: The research aimed to compare the fermentability of three resistant starches (RS2, RS3, and RS5) in vitro. Results showed that RS5 and RS3 produced large amounts of short-chain fatty acids when fermented by gut microbiota, with RS5 producing more butyric acid and RS3 producing more lactic acid. Additionally, RS5 significantly increased the relative abundance of beneficial bacteria.

Summary: A mathematical model was developed in this study to parameterize the gelatinization thermograms of starch effectively, revealing hidden features and sub-components. Analysis of nine different starches from various plant origins indicated the existence of semi-crystalline lamellae with different thermal stabilities in native starch granules.

Causal relations among starch fine molecular structure, lamellar/crystalline structure and in vitro digestion kinetics of native rice starch

Cheng Li et al.

Summary: The study found that rice starches with shorter amylopectin short chains have more perfectly aligned crystalline lamellae and slower digestion rates. There is no clear correlation between starch lamellar thicknesses and digestion rate. Furthermore, starches with relatively shorter amylose short and medium chains show a higher amount of V-type amylose-lipid complex and a smaller maximum digestion extent.
