Correlation of the bacterial communities with umami components, and chemical characteristics in Zhejiang xuecai and fermented brine

Summary: This study investigated the bacterial communities in xuecai and the brine, as well as their correlations with umami components and chemical characteristics. Results showed higher levels of certain components in the brine samples, which could be used to distinguish xuecai and brine. Halophilic bacteria were found to have a positive impact on umami components and chemical characteristics, while lactic acid bacteria showed a negative correlation with some components. Further analysis revealed predominant pathways in membrane transport, carbohydrate metabolism, and amino acid metabolism.

Comparative Analysis of Traditional and Modern Fermentation for Xuecai and Correlations Between Volatile Flavor Compounds and Bacterial Community

Lactobacillus-related genera dominates in modern fermentation Xuecai, while Halanaerobium and Halomonas are dominant in traditional fermentation Xuecai. The study also suggests that carbohydrate metabolism and amino acid metabolism are closely associated with the bacterial communities of Xuecai, highlighting the importance of halophilic bacteria in flavor formation.

Culture-independent analysis of the bacterial community in Chinese fermented vegetables and genomic analysis of lactic acid bacteria
