Comparison of Different Image Processing Methods for Segregation of Peanut (Arachis hypogaea L.) Seeds Infected by Aflatoxin-Producing Fungi

Summary: Fungi such as Aspergillus flavus and Aspergillus parasiticus infecting food and animal feed are responsible for aflatoxin contamination, posing a significant threat to human and animal health. The study investigated the use of different lighting sources and backgrounds to detect and segregate peanut seeds infected with an aflatoxin producing fungus. Results showed that LED light and a white background with artificial neural network (ANN) achieved 99.7% accuracy in detecting fungal growth on peanuts 72 hours after infection with Aspergillus, while UV light and black background with adaptive neuro-fuzzy inference system (ANFIS) achieved 99.9% accuracy 48 hours after infection.
