Summary: The study developed a novel structure of food-grade nanoliposomes stabilized by a 3D organogel network within the bilayer shell, showing improved stability and encapsulation efficiency compared to control group. The nanoliposomes maintained excellent stability and high negative zeta potential during storage, and successfully encapsulated vitamin D-3 with increased loading efficiency.

Fabrication and characterization of cuminaldehyde-loaded electrospun gliadin fiber mats

Summary: The study developed a novel electrospun fiber with antibacterial properties by incorporating cuminaldehyde in gliadin fibers. The optimal concentration of cuminaldehyde was determined to be 20%, resulting in enhanced antibacterial activity and thermostability. These findings suggest the potential use of cuminaldehyde-loaded gliadin fibers in food applications.
