Biocatalysis: Enzymatic Synthesis for Industrial Applications

Summary: The importance of yeast old yellow enzymes in the direct asymmetric reduction of (E/Z)-citral to (R)-citronellal is growing. By modifying the enzyme OYE3 and its variants, researchers were able to develop a novel approach for synthesizing enantio-pure (R)-citronellal. This approach also led to the development of a cascade reaction that could discriminate between (E)-citral and (Z)-citral.
