Nudging healthy and sustainable food choices: three randomized controlled field experiments using a vegetarian lunch-default as a normative signal

Summary: Changing the default lunch option to vegetarian is an effective, generic, easy to scale, and well-accepted nudge to promote healthy and sustainable food choices at conferences. Results showed a significant increase in vegetarian choices and a tendency for men to opt out of the vegetarian default, while most participants reported positive attitudes towards this nudge.

Reducing meat consumption in meat-loving Denmark: Exploring willingness, behavior, barriers and drivers
