Consumption Preferences of Pulses in the Diet of Polish People: Motives and Barriers to Replace Animal Protein with Vegetable Protein

Summary: Despite the awareness of the health benefits of pulses, consumption remains low in many countries. This study aimed to identify factors influencing pulse consumption, including culinary trends. Results showed that consumers, influenced by world cuisines, particularly from the Middle Eastern and Mediterranean regions, are more likely to consume pulse products. To increase pulse consumption, it is crucial to continue educating society through various channels and utilizing celebrity endorsements.
