Synthesis of flavor compound ethyl hydrocinnamate byYarrowia lipolyticalipases

Summary: Two biocatalysts with high lipolytic activity, freeze-dried supernatant and freeze-dried biomass of Yarrowia lipolytica KKP 379, were compared with Candida antarctica lipase B in the synthesis of ethyl hydrocinnamate. Ester synthesis using freeze-dried biomass showed good conversion rates, with results comparable to CALB. The synthesized ester showed no antibacterial activity, weak antioxidant activity, and moderate inhibition of yeast growth.

Enzymatic Synthesis of Lipophilic Esters of Phenolic Compounds, Evaluation of Their Antioxidant Activity and Effect on the Oxidative Stability of Selected Oils

Summary: The study aimed to compare the effect of substituents and their positions in the aromatic ring on the antioxidant activity of hexanoic acid esters. It was found that the presence and position of the hydroxyl group in the aromatic ring determined the antioxidant activity, with vanillyl alcohol, vanillyl hexanoate, and BHT showing the highest activities. Additionally, vanillyl hexanoate at concentrations of 0.01% and 0.1% enhanced the oxidative stability of sunflower and rapeseed oils, extending their induction times significantly.

Summary: This study evaluated the use of freeze-dried Y. lipolytica biomass as a whole-cell catalyst in the synthesis of lipophilic antioxidants. While successful in synthesizing esters of phenylpropanoic acid derivatives, the conversion rate was low for phenylacetic acid derivatives. The biological activity of phenolic acid esters was closely related to their chemical structures, with butyl esters showing high antifungal activity.
